I personally prefer reading Doujinshi much more than watching hentai. It's like the same couple of scenes over and over again with hentai movies and subpar voice actors.

Sorry, honestly you have got no clue about this matter. Hentai normally means pervert. Reg. printed or animated media hentai (drawn or animated 18+ material) is spilt into OVAs (original video animation) and series of animation, games, visual novels, mangas, doujins, flash games and gimmix, in 2D or 3D. Doujins just are smaller books including between about 12 and 25 pages only, done by doujin circles. Mangas (tankoubons) however consist of about 200 pages (black / white) or in newer times about 100 pages in color. Behind a manga is a mangaka, the person who draw the paintings and perhaps someone who was responsible for the text, although this normally is the same person, though that is not always the case. A doujin circle may consist of one or more members, at least one of them is a mangaka.

So there is no difference between hentai and doujinshi because doujinshis just are part of hentai.

Hentai as a phrase is used in western countries to name full 18+ (adult) erotic drawn or computer made material, ecchi is used for 15+ erotic material [Japan, in other countries it is 16+] without explicit sex scenes.

In Japan instead of hentai more the phrase "ero" [like to be seen in my signature] is used.
